True walnut enjoyment begins with its origin.

It all begins at Schafhof in the Esslingen district. Here, my walnut trees grow, and the nuts ripen at their own pace. This close connection to nature forms the basis for quality you can taste and trust.

Gently processed. Full of flavor.

In my own oil mill, I press the walnuts with particular care, using minimal heat. This preserves valuable nutrients, vitamins, and the delicate, characteristic nutty aroma. No additives. No compromises.

Where fine oils with character are created from good raw materials

For me, good oils don't begin with the processing. They begin where I select, test, and calmly decide what truly belongs in my oil mill. Because what is later perceptible in the aroma, texture, and taste is created long before the first pressing begins. The best starting point is always an honest raw material. It must be harmonious, clearly defined in its origin, and suitable for processing that preserves rather than alters it. That is precisely what I value.

Therefore, my work is not about achieving as many effects as possible, but about a reliable, artisanal approach. Good oils should not be loud. They should be clear. And they should evoke some of the tranquility with which they were processed.

For me, it's crucial that the pressing process is carried out with care. Not haste, but attention makes all the difference in the end. This allows the ingredients to be preserved in the best possible way, without the product seeming technical or generic. My aim is for something unique to emerge from a good foundation. Not just any result, but an oil with character, depth, and a distinctive flavor that needs no explanation because it's palpable.

For your kitchen, this means oils that can be used consciously. For refining, for rounding out, and for moments when good products can quietly reveal their true potential. For me, this is precisely the real strength of artisanal production. Not in grand pronouncements, but in the way something is made and how naturally it ultimately convinces.

Craftsmanship you can taste and quality you can feel

For me, craftsmanship isn't something you just claim. It's evident in every step. In the selection of the walnuts, in the care I take with each batch, and in the patience that good products simply require. In my workshop, I don't strive for loudness, but for clarity. What's created here isn't meant to impress, but to be harmonious. That's precisely why you experience quality not as a spectacle, but as the product's inherent tranquility.

I work with small batches because they allow me the attention that meticulous production demands. Every step remains manageable, traceable, and closely connected to the product. This is how high-quality oils are produced that don't come from an anonymous process, but from genuine handcraft. This difference isn't abstract. You can taste it. In the balance, in the depth, and in the impression that nothing has been artificially altered. This is especially important with cold-pressed oils. Cold pressing demands respect for the raw material and a clear understanding of when restraint is more effective than technical intervention. What is pressed shouldn't just function, but should be allowed to retain its origin and its structure. This is how edible oils are created directly from a process that takes the character of the starting materials seriously. The result is high-quality, but not overly polished. It is clear, natural, and inherently credible. I see my work as part of a family business where experience doesn't need to be talked about. It manifests itself where products are reliably good, where techniques are second nature, and where quality isn't just a buzzword, but a lived reality. For people who value quality, this is often precisely what they can feel. Not as a show, but as a subtle difference that remains.

Unfiltered. Natural. Tranquil to its full depth

Some things benefit precisely from not being unnecessarily altered. That's why I work unfiltered and natural wherever it makes sense. I want an oil to retain what makes it special: its own color, its depth, its subtle cloudiness, its naturalness. Not every expression needs to be smoothed over. On the contrary, it is often precisely in this immediacy that the credibility lies which makes a good product so special.

When an oil comes freshly pressed from the screw press, it still carries much of its origin within it. It seems vibrant, calm, and clear all at once. For me, this is where the real appeal begins. I work gently at low temperatures to preserve the valuable ingredients as much as possible. It's a processing method that doesn't aim to speed things up, but rather to preserve them. That's precisely why I prefer to speak of gentle pressing, not just a technical step. For me, a natural character doesn't mean a lack of clarity, but rather honesty. The oils reveal more of themselves when they aren't smoothed over. They remain close to the raw material, close to the pressing process, and close to the attitude with which they are produced. This is particularly evident with walnut oil. It can be mild yet have depth. It can be smooth yet precise. And in the kitchen, it can unfold precisely that tranquility that was already present in its creation. This is also how I understand bottling. Not as the final technical step, but as the conscious conclusion of a process carried out with respect. What is then bottled is not merely a product. It is an expression of care, patience, and a way of working that doesn't stage naturalness, but lives it naturally.

In my oil mill & manufactory, enjoyment beyond the ordinary is created

In my oil mill & manufactory, my aim is not simply to package the ordinary in a more attractive way. My ambition is different. I want to produce oils that impress with their substance. Not through sheer volume, but through character, origin, and a processing method that takes the essentials seriously. For me, enjoyment always begins where a product possesses something unique. A clarity in aroma, a serenity on the palate, and a depth that doesn't seem contrived, but rather naturally developed.

That's why I work with a carefully curated selection. Every oil should have its place. Not as an interchangeable ingredient, but as an independent expression of a particular variety or flavor profile. High-quality walnut varieties, carefully selected and expertly processed, form the basis. The result is oils that remain subtle in their effect and, precisely because of this, linger long after the last sip. It's important to me that enjoyment is never described in isolation from the production process. What ends up in the bottle always bears the mark of the journey there. In my oil mill, this means working calmly, in comprehensible steps, and with an eye for the big picture. The oils should be suitable for mindful cooking, refining dishes without dominating everything. They should contribute something without being intrusive. I also consider health aspects objectively. If an oil naturally contains fatty acids like Omega 3 or Alpha Linolenic Acid, then this can be mentioned. But never as the main focus. Because for me, enjoyment remains the most important criterion. A good oil must first and foremost be a culinary delight. Everything else is complementary. This is precisely what creates that quiet quality that lies beyond the ordinary, without ever pushing itself to the forefront.

When handcraft becomes something truly special

Something special doesn't arise from exaggeration. It arises where attention, experience, and a clear vision converge. For me, handcraft is therefore not a romantic notion, but a lived practice. It is evident in the processes, the close connection to the product, and the willingness to choose not the fastest, but the most harmonious path. This is precisely how oils acquire that serene depth that one later tastes.

I work with a gentle cold-pressing process because I want to preserve the structure, aroma, and character as much as possible. Good products don't need unnecessary intervention. They need a method that takes them seriously. That's why it's often the small decisions that ultimately make the difference. How a seed is treated. How long a batch rests. And the care taken during the transition from pressing to the finished bottle. For me, the special thing never lies in a grand gesture. It lies in the sum of many careful steps. When I work with the best raw materials, it's not to make grand promises, but to give the products an honest foundation. This results in high-quality oils that don't have to claim their quality. They show it. In the aroma, the mouthfeel, and the way they naturally complement food. For people who don't choose good food based on appearances, this is often immediately understandable. An oil produced with care carries that care with others. It becomes part of the kitchen, part of good habits, and part of those quiet moments when true quality, without any excess, becomes palpable. That, for me, is what makes it truly special.

For people who appreciate genuine craftsmanship and honest oils

These oils are for people who prefer the genuine to the merely average. For people who aren't looking for loud promises, but for products that are consistent in themselves. I meet this demand with a working method that remains honest. No unnecessary staging, no empty phrases, but a clear stance. In my oil mill, natural cooking oils are produced that embody tranquility, care, and experience.

Those who appreciate such oils quickly notice what makes them different. They don't seem arbitrary. They have depth, remain clear, and accompany dishes with a naturalness that can only come from clean production. That's precisely why they're popular with people who consider origin, processing, and taste together. For me, this isn't a target group in the traditional sense. They're people with a refined sense for what's well-made. I work in such a way that raw food quality is pursued where it makes practical sense and suits the product. It's never about a buzzword, but about how much of the original character can be preserved. If the valuable nutrients are retained, that's part of good production. Nothing more, but also nothing less. This is how high-quality, cold-pressed oils are created that can enrich your cooking in a subtle way. For me, that's the core of my work. Not just producing oils, but creating honest companions for everyday life. For people who take taste seriously, appreciate craftsmanship, and want to feel in the product that it was made with respect. This is how a bottle becomes more than just a kitchen product. It becomes an expression of attitude, care, and genuine connection to the source.
